So being British, Fish & Chips are a BIG deal to me. I have a hard time with finding the perfect balance here in Vancouver. The fish needs to be crispy on the outside, juicy and tender on the inside. Minced fish does not cut it. Check out my reviews.
I'm looking for a good crust, not too doughy and not too crisp. A perfect balance of flavours, not over salty and not under seasoned, it needs to have perfect char, not over cooked.
